Grandma's Super Corn Fritters

We have incredibly fond memories of standing in Grandma's kitchen watching her make corn fritters. These were so good!! Salty and savory and very satisfying. Now as moms, we have the nightly dilemma of coming up with healthy, easy dinners. Nutrition is so important and we have found a way to make Grandma's corn fritters a super food; which is fun and healthy for your family.

Sara and I have doctored this recipe to give you and your family a filling side dish that is loaded with nutrition; all because of a few secret ingredients.


This time of year, late summer, yields lots of zucchinis. This is their season! If you peel and shred the zucchini's, you can slip them into these corn fritters and discretely give your family a huge dose of veggies!

Anyway, I hope you enjoy this special dish that is healthy and nourishing and is great to accompany a hearty soup. Enjoy!


Ingredients:

* 1/3 cup MIlk

* 2 Tbs of Butter (melted)

* 2/3 tsp salt, (more or less depending on your taste)

* Pepper (a generous sprinkle)

* 2 tsp on baking powder

* 1 Egg

* 1/2 cup of flour (you may need a bit more to make the batter a little thicker)

Mix these together to create a batter, and then fold the following ingredients into your batter.

Batter for Grandma's Corn Fritters

* 1 can of corn, drained

* 3/4 cup of peeled, shredded, and towell dried Zucchini. (really make sure this is as dried as you can get it.)

* 1TBS of Nurtritional Yeast




Batter is all ready for the griddle!

Butter up your griddle and spoon the mixed batter on to a medium heat. After about 3 to 5 minutes, flip them over. Flip back and forth until the cakes are browned on each side.

Serve with a spread of butter and enjoy with a good soup!
